Nitori Kawashiro is one of the kappa who live in the Genbu Ravine and appears to be some sort of leader among them. She's an engineer at heart and quite the savvy businesswoman. Apparently, she also plays a key role in preventing floods throughout Gensokyo.
The Genbu Ravine is located close to the Magic Forest and is home to the kappa. The sides of the ravine are composed of hexagonal pillars that look like segments of a turtle's shell when viewed from above. At times of emergency, like when the river swells, the kappa evacuate to land to avoid getting swept away by the surging current.
Kappa are an incredibly famous type of youkai known for having a dish-shaped structure on their heads, a turtle-like shell on their backs, beaks, and webbed hands and feet. They live in rivers and pull humans into the water to take their shirikodama. Cucumbers are generally considered to be their favorite food, which is why cucumber sushi rolls are called kappa-maki in Japanese.
There's also an urban legend about a youkai-like being with a bob haircut who appears near a source of water... but it's not known whether she is related in any way to kappa or not.

Its fruits are a staple of Japanese cuisine and are consumed as culinary vegetables the world over. Cucumbers are approximately 95% water, making them one of the lowest calorie vegetables. They're also famous in Japan for being the favorite food of kappa.
